Blueberry muffin 藍莓馬芬

暑假晃眼便過
還是有點不能接受自己已不再'fresh'的事實haha :p
還記得上學期上9:00的課 有人一邊吃早餐一邊上課
整個lecture theatre瀰漫了香噴噴的muffin味道
誘得我下課後立馬跑到cafe買來吃呢~

這個食譜是修改至allrecipes有名的 'to die for blueberry muffins' 及參考了Victoria的做法
可做成8個regular muffins/ 6 bakery style muffins

Ingredients:
1 1/2 cup all purpose flour
1/3 cup white sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 egg
1/3 cup milk
1 teaspoon vanilla extract
1 cup blueberries

Directions (regular style/ bakery style)
1. Preheat oven to 200c (240c).
2. Combine flour,sugar, salt and baking powder.
3. Whisk together vegetable oil, egg and milk.
4. Mix the wet into the dry and fold in blueberries (DO NOT OVER MIX).
5. Fill muffin cups 70-80% full. (right to the top)
6. Bake for 20 to 25 minutes in the preheated oven, or until done. (Turn the oven temperature to 220c and bake for 10mins, after that bake at 200c for another 10-15 mins)
