巧克力杯子蛋糕 Chocolate Cupcakes

這幾天一直很想吃杯子蛋糕
Something decently rich and chocolate-y :P
沒有太花巧的裝飾, buttercream也只是隨意地抹上~


Chocolate Cupcakes (8-10 mini cupcakes/4-5 regular cupcake) :

Ingredients:

Butter                           40g
Chocolate                      35g
Instant coffee powder    1 tsp
Milk                             2 tsp
Sugar                            25g
Cocoa powder               1 tbsp
Cake flour                     38g
Baking powder             1/3 tsp

Directions:
1. Melt butter, chocolate and instant coffee powder in a saucepan. When melted take off the heat and add the milk.
2. Whip egg and sugar until light and fluffy.
3. Sift in cocoa powder, flour and baking powder and fold well.
4. Add the melted butter and chocolate into the batter and mix well.
5. Bake in a pre-heated oven (200c) for 12-15 minutes.

玉米片馬卡龍 Frosties macarons

小時候最愛的早餐便是玉米片配維他奶
長大後的零嘴也離不開玉米片與granola
把frosties加入馬卡龍麵糊裡
是要把吃馬卡龍作早餐這行為合理化嗎(哈哈)




玉米片馬卡龍 Frosties macarons

(20-24個)

材料:

蛋白 95g
砂糖 25g

杏仁粉 65g
糖粉 200g
玉米片* 45g (需壓碎成粉狀)

*(我用了frosties,可改用任何cereal)


做法:

1)蛋白加入砂糖,打起至stiff peaks狀態

2)篩入杏仁粉,糖粉與玉米片

3)混合均勻至lava-like consistency

4)把麵糊唧在焗盤上,輕敲焗盤數下減少表面氣泡,等候麵糊表面乾燥

6)放入已預熱140度的焗爐烘烤20-25分鐘
